How to Grill Lamb Chops Perfectly Every Time
What You’ll Need:
(Makes 6 chops)
- 2 tablespoons olive oil
- 2 garlic cloves
- 2 sprigs of rosemary, leaves only
- 1 teaspoon fresh thyme leaves
- salt + freshly-cracked black pepper
- 6 small lamb rib chops
Step 1: Using a food processor of immersion blender, blend the olive oil, garlic cloves, rosemary and thyme until almost smooth.
Step 2: Season the lamb chops generously with salt and freshly-cracked black pepper on both sides. Then spread the oil and herb mixture evenly over the chops.
Step 3: Allow the lamb chops to marinate for at least 1 hour in the fridge. Take the lamb chops out of the fridge 30 minutes before you plan to grill them; so they are room temp.
Step 4: Heat your cast iron grill pan over a high flame. Place 2-3 lamb chops on the pan at a time (making sure not to over crowd the pan) Cook the lamb chops for 3 minutes on each side (for medium doneness) and repeat with the rest of the chops.
